Yogurt is formed when milk is fermented by certain good bacteria, like this one, Lactobacillus bulgaricus, rather than one of the bad ones, which produce toxins causing the milk to spoil. Like many discoveries, the first yogurt was probably accidental. We'll never know for sure, but this food that has been made for over four thousand years is alive (literally) and well.
